Salad with chicken and orange
Ingredients
• 1 chicken breast, skinless, in bites
• 150 g baby spinach
• 2 oranges, cut into small pieces, without the membranes
• 150 g rocket
• 1 tbsp. "Lof" Extra Virgin Olive Oil
• 1 tsp. spice mix for chicken
• 15 cherry tomatoes, cut in half
• Fresh basil leaves
• Salt
For the sauce
• The zest and juice of 1 small orange
• 1 tsp. mustard
• 1 tsp. honey
• 2 tsp. strained yogurt
• A few drops of floral water
• ¾ cup "Lof" Extra Virgin Olive Oil
• Salt, pepper
Execution
• Heat a non-stick pan at a high temperature, add the "Lof" Extra Virgin Olive Oil and sauté the chicken with the salt and the spice mix, until the chicken is cooked.
• Allow it to reach room temperature.
• Mix all sauce ingredients together.
• In a salad bowl, add the green vegetables and cherry tomatoes.
• Salt lightly.
• Add half the sauce and mix well.
• Add the chicken and pour over the remaining sauce.
