Soup with potato, leeks and bacon
Ingredients
• 300 g potatoes, peeled, diced in medium pieces
• 50 g butter
• 50 g Pdo Sitia Extra Virgin Olive Oil "Golden Creta Savouidakis"
• 75 g onion, in thin slices
• 150 g leeks, in thin slices
• 50 g bacon, diced in medium pieces
• 350 g chicken broth
• 100 ml sour cream
• 10 sprigs of thyme
• Salt
Execution
• Place a pot over medium heat.
• Add the butter, the Pdo Sitia Extra Virgin Olive Oil "Golden Creta Savouidakis", the onion, the leeks and bacon, season with salt and wait until it softens.
• Add the thyme and stir for approx.1 min.
• Add the potatoes and the broth, bring to a boil, then lower the temperature.
• Add salt and simmer until it has softened well.
• Salt the broth to give it flavor, add the cream and cook for another 10 mins.
• Grind well in a blender and sift using a very fine sieve. Add salt, if necessary.
• If you do not serve the soup immediately, cool it off quickly and preserve it in the fridge.
