Soup with potato, leeks and bacon

Ingredients

300 g potatoes, peeled, diced in medium pieces
50 g butter
50 g Pdo Sitia Extra Virgin Olive Oil "Golden Creta Savouidakis"
75 g onion, in thin slices
150 g leeks, in thin slices
50 g bacon, diced in medium pieces
350 g chicken broth
100 ml sour cream
10 sprigs of thyme
Salt

 

Execution

Place a pot over medium heat.
Add the butter, the Pdo Sitia Extra Virgin Olive Oil "Golden Creta Savouidakis", the onion, the leeks and bacon, season with salt and wait until it softens.
Add the thyme and stir for approx.1 min.
Add the potatoes and the broth, bring to a boil, then lower the temperature.
Add salt and simmer until it has softened well.
Salt the broth to give it flavor, add the cream and cook for another 10 mins.
Grind well in a blender and sift using a very fine sieve. Add salt, if necessary.
If you do not serve the soup immediately, cool it off quickly and preserve it in the fridge.
