Red beet soup


2 tbsp. Premium Extra Virgin Olive Oil "Savoil Vivre"
4 beets (only the bulbs)
1 potato
1 large onion
1 clove of garlic
2-3 sprigs of celery (only the white part)
4 cups of water
1/2 cup red wine
1 cup of smashed cheese (feta or anthotyros)
1 tbsp. vinegar
Salt and pepper



In a pot with Premium Extra Virgin Olive Oil "Savoil Vivre", sauté the beets, the potato, the onion, the garlic and the celery, coarsely chopped, then add the wine.
Add water, salt and pepper, and leave the food to simmer for 30-35 mins.
Put the mixture in the blender and mash it into a cream.
Then, put it back in the pot.
When it starts to boil, add the cheese and simmer for 2-3 mins.
Add the vinegar, remove from the heat, garnish with dill and serve.
