Red beet soup
Ingredients
• 2 tbsp. Premium Extra Virgin Olive Oil "Savoil Vivre"
• 4 beets (only the bulbs)
• 1 potato
• 1 large onion
• 1 clove of garlic
• 2-3 sprigs of celery (only the white part)
• 4 cups of water
• 1/2 cup red wine
• 1 cup of smashed cheese (feta or anthotyros)
• 1 tbsp. vinegar
• Dill
• Salt and pepper
Execution
• In a pot with Premium Extra Virgin Olive Oil "Savoil Vivre", sauté the beets, the potato, the onion, the garlic and the celery, coarsely chopped, then add the wine.
• Add water, salt and pepper, and leave the food to simmer for 30-35 mins.
• Put the mixture in the blender and mash it into a cream.
• Then, put it back in the pot.
• When it starts to boil, add the cheese and simmer for 2-3 mins.
• Add the vinegar, remove from the heat, garnish with dill and serve.
