Let's Cook...Taramosalata à la Savouidakis!
Meet your new favorite Clean Monday treat and the perfect companion for the 40-day Lenten journey leading up to Greek Easter. Silky, briny, and irresistibly creamy, with SAVOU Extra Virgin Olive Oil doing what it does best.
Ingredients (Serves 4)
- 200g white fish roe (tarama)
- 4 slices stale white bread, crusts removed
- 1 small onion, grated
- Juice of 2 lemons
- 200ml SAVOU Extra Virgin Olive Oil, plus extra for drizzling
- Olives, for garnish
Method
- Soak the bread in cold water, then squeeze out all excess liquid.
- Blend the onion, fish roe, and lemon juice until smooth.
- Add the bread and continue blending. Slowly and steadily pour in the SAVOU Extra Virgin Olive Oil until the mixture becomes silky, smooth, and creamy.
- Taste and adjust the lemon juice as desired.
- Transfer the taramosalata to a serving bowl, drizzle with additional SAVOU Extra Virgin Olive Oil, and garnish with olives.
- Serve with traditional lagana bread, warm pita, or crunchy fresh vegetables.
- The secret? Never rush the olive oil. Pour it slowly, allow it to emulsify properly, and let it work its magic.
For the full Greek experience, enjoy it as part of your Clean Monday feast and finish the day by flying a kite, just as tradition calls for.
