Black-eyed beans with tuna and rocket
Ingredients
• 200 g black-eyed beans
• 1 bunch of rocket, coarsely chopped
• 1 1/2-2 cans of tuna (in water or olive oil)
• 1 small cucumber, diced
• 20 cherry tomatoes, cut in half
• 6 sprigs of parsley, finely chopped
• 1 medium onion, chopped
For the sauce
• 4 tbsp. "Lof" Extra Virgin Olive Oil
• 2 tbsp. lemon juice
• Salt, pepper
• 1 tsp. mustard
• 1 lemon (its zest)
Execution
• Boil the beans in plenty of salted water until they become soft.
• Approx. 15 mins later, take them out before they start to "pop" and melt.
• Strain them.
• Mix all ingredients together in a salad bowl and pour the sauce over them, after first beating all the sauce ingredients in the blender.
