Black-eyed beans with tuna and rocket


200 g black-eyed beans
1 bunch of rocket, coarsely chopped
1 1/2-2 cans of tuna (in water or olive oil)
1 small cucumber, diced
20 cherry tomatoes, cut in half
6 sprigs of parsley, finely chopped
1 medium onion, chopped

For the sauce

4 tbsp. "Lof" Extra Virgin Olive Oil
2 tbsp. lemon juice
Salt, pepper
1 tsp. mustard
1 lemon (its zest)



Boil the beans in plenty of salted water until they become soft. 
Approx. 15 mins later, take them out before they start to "pop" and melt. 
Strain them.
Mix all ingredients together in a salad bowl and pour the sauce over them, after first beating all the sauce ingredients in the blender.
