Lemon rabbit with thyme or oregano

1 rabbit, weighing approx. 1200 g
2/3 glass of Premium Extra Virgin Olive Oil "Savoil Vivre"
1 large onion
The juice of 3 medium lemons
1 tbsp. thyme or 1 tsp. oregano
Salt, pepper



Wash the rabbit well and cut it into portions.
Once the oil has been heated in the pot, add the finely chopped onion and, when golden brown, add the rabbit and sauté on both sides for 5-7 mins.
Immediately after, season with salt and pepper, add the thyme or oregano, the lemon juice, one glass of water and let it simmer over medium heat for 40 mins. If the water has been absorbed during boiling, you can add some more.
