Tart with cheese and spinach


1 onion, finely chopped
500 g spinach, frozen
½ teacup Pdo Sitia Extra Virgin Olive Oil "Golden Creta Savouidakis"
1 puff pastry sheet
1 egg
¾ teacups fresh milk
400 g various yellow cheeses, grated 
1 small light sour cream



In a non-stick pan, heat the Pdo Sitia Extra Virgin Olive Oil "Golden Creta Savouidakis" over medium heat and sauté the onion (2-3 mins).
Add the spinach and sauté until all liquids have been absorbed.
Remove from the heat and wait for it to cool off.
Meanwhile, butter a tart pan and spread the puff pastry sheet.
If there is excess pastry over the tart pan, cut it with a pointy knife.
Pierce the puff pastry with a fork and put it aside.
In a bowl, beat the egg, milk, salt and pepper.
Add the grated cheeses, the mix with the spinach and sour cream and blend everything well together.
Place the filling on the puff pastry and spread it evenly.
Fold and twist any excess part of the puff pastry sheet around the filling.
Cook in a preheated oven at 180°C (convection function) for 40-45 mins until the tart surface turns golden brown and the puff pastry is well cooked.
