Lentils with bacon

Ingredients

500 gr lentils
1 cup "Lof" Extra Virgin Olive Oil
1 potato
1 carrot
1 clove of garlic
1 cup tomato paste
1 onion
1+ liter of water
3 bay leafs
Salt - pepper

 

Execution

Bring the lentils to a boil. Change the water and add the remaining ingredients.
In the meantime, peel the carrot and the potato and wash them.
Cut the vegetables and the bacon.
When the lentils come to a boil again, remove them from the heat.
Then, put the bacon in the pot and sauté lightly with "Lof" Extra Virgin Olive Oil.
At this point, add the garlic. You can add it whole. If you wish, you can also chop it.
When the bacon starts to brown, add the onion.
Then, add the potatoes and the carrots and continue to stir over relatively high heat.
Add the lentils in the pot.
After stirring 2-3 times, add water.
Finally, add the tomato paste, a few bay leaves, salt and pepper.
Now, half-cover the pot with the lid and let it simmer for approx. 30 mins.
