Lentils with bacon
Ingredients
• 500 gr lentils
• 1 cup "Lof" Extra Virgin Olive Oil
• 1 potato
• 1 carrot
• 1 clove of garlic
• 1 cup tomato paste
• 1 onion
• 1+ liter of water
• 3 bay leafs
• Salt - pepper
Execution
• Bring the lentils to a boil. Change the water and add the remaining ingredients.
• In the meantime, peel the carrot and the potato and wash them.
• Cut the vegetables and the bacon.
• When the lentils come to a boil again, remove them from the heat.
• Then, put the bacon in the pot and sauté lightly with "Lof" Extra Virgin Olive Oil.
• At this point, add the garlic. You can add it whole. If you wish, you can also chop it.
• When the bacon starts to brown, add the onion.
• Then, add the potatoes and the carrots and continue to stir over relatively high heat.
• Add the lentils in the pot.
• After stirring 2-3 times, add water.
• Finally, add the tomato paste, a few bay leaves, salt and pepper.
• Now, half-cover the pot with the lid and let it simmer for approx. 30 mins.
