Chocolate mousse with olive oil
Ingredients
• 180 gr couverture with 70% cocoa, finely chopped
• 120 gr Extra Virgin Olive Oil "Liolado Savouidakis"
• 4 egg whites
• 4 egg yolks
• 130 gr sugar
Execution
• Melt the couverture in bain marie or in the microwave.
• Once the couverture is melted, remove it from the heat and add the olive oil while mixing well.
• In the mixer's bowl, whisk the egg yolks with half of the sugar until the mixture gets white and pour it into the chocolate mixture.
• Wash and wipe the mixer thoroughly and whip the egg whites with the remaining sugar to a meringue.
• Pour it into the chocolate mixture, while mixing gently with a spatula.
• Fill your bowls and refrigerate for 2-3 hours before serving.
