Brownies with olive oil and cocoa

Ingredients

¾ cup all-purpose flour
¾ cup wholemeal flour
1 ½ cup brown sugar
3 eggs
½ cup "Lof" Extra Virgin Olive Oil
½ cup cocoa
1 pinch of salt
1 pinch of cinnamon or 1 vanilla

 

Execution

Preheat the oven to 170°C and grease a medium baking tray or a baking dish.
Break the eggs.
Add the sugar and beat at high speed for 6-7 mins, until the mix becomes fluffy and white.
Lower the speed and add the "Lof" Extra Virgin Olive Oil slowly, with a constant flow.
Sift the flour, cocoa and cinnamon in a bowl and add the salt.
Combine the two mixtures and use a spatula or ladle to stir gently in circles until you have a relatively firm dough.
Spread the dough on the greased tray and bake for 25-30 mins.
Allow it to cool off completely and cut into square pieces.
