Brownies with olive oil and cocoa
Ingredients
• ¾ cup all-purpose flour
• ¾ cup wholemeal flour
• 1 ½ cup brown sugar
• 3 eggs
• ½ cup "Lof" Extra Virgin Olive Oil
• ½ cup cocoa
• 1 pinch of salt
• 1 pinch of cinnamon or 1 vanilla
Execution
• Preheat the oven to 170°C and grease a medium baking tray or a baking dish.
• Break the eggs.
• Add the sugar and beat at high speed for 6-7 mins, until the mix becomes fluffy and white.
• Lower the speed and add the "Lof" Extra Virgin Olive Oil slowly, with a constant flow.
• Sift the flour, cocoa and cinnamon in a bowl and add the salt.
• Combine the two mixtures and use a spatula or ladle to stir gently in circles until you have a relatively firm dough.
• Spread the dough on the greased tray and bake for 25-30 mins.
• Allow it to cool off completely and cut into square pieces.
