 Cookies with cocoa and brown sugar

Ingredients

100 g brown sugar
100 g Cretan "Thyme Honey by Savouidakis" 
150 g "Lof" Extra Virgin Olive Oil
2 eggs
400 g all-purpose flour
1 tsp. cocoa
1 pinch of salt
Orange or lemon zest
400 couverture, melted
150 g drops of white chocolate
200 g drops of dark chocolate

 

Execution

Use a whisk to mix the olive oil, the sugar, the Cretan "Honey with Thyme by Savouidakis" and the zest.
Add the eggs and stir.
Slowly add the melted chocolate and stir again.
Combine the flour with the cocoa and add them to the mix.
Finally, add the drops and stir so that they go everywhere.
Shape the mix into little balls or take spoonfuls from the mixture and add them on a baking tray with greaseproof paper.
Bake at 160-170°C using the convection function for 8-10 mins.
