Fried rice with bacon and vegetables
Ingredients
• 2 tsp. "Lof" Extra Virgin Olive Oil
• 4 slices of bacon, finely chopped
• 4 onions, finely chopped
• 1 cup frozen peas
• 1 cup frozen corn
• 1 cup red pepper, finely chopped
• 1 egg, slightly beaten
• 450 g rice
• 1 tbsp. vegetable stock
Execution
• In a deep pan, add the olive oil over medium heat.
• Add the bacon and onions.
• Stir and sauté for 2--3 mins, until the bacon becomes crispy.
• Then, add the peas, the corn and the pepper.
• Stir well for 2 mins and add the beaten egg.
• Stir until the egg is cooked.
• Add the rice and the stock and continue stirring until the rice is ready.
• Serve with grated parmesan cheese.
