Fried rice with bacon and vegetables


2 tsp. "Lof" Extra Virgin Olive Oil
4 slices of bacon, finely chopped
4 onions, finely chopped
1 cup frozen peas
1 cup frozen corn
1 cup red pepper, finely chopped
1 egg, slightly beaten
450 g rice
1 tbsp. vegetable stock



In a deep pan, add the olive oil over medium heat.
Add the bacon and onions.
Stir and sauté for 2--3 mins, until the bacon becomes crispy.
Then, add the peas, the corn and the pepper.
Stir well for 2 mins and add the beaten egg.
Stir until the egg is cooked.
Add the rice and the stock and continue stirring until the rice is ready.
Serve with grated parmesan cheese.
